Cake “Монастырская изба”…

This cake is very popular in Russia and other countries from former Soviet Union. “Монастырская изба” literally means the roof of a cottage and is super delicious. It is one of my favourite cake and although it seems difficult to prepare it is quite simply and easy. This is the recipe I tried and I trust it.

Ingredients

For dough:

Flour – 400-450 g

Butter (at room temperature) – 250 g

Sour cream – 200 g

Baking powder – 15 g

Sugar – 200 g

For cream:

Sour cream – 800 g

Sugar – 250 g

How to prepare:

First, prepare the dough. Add the baking powder in the sour cream and mix them.

Then, beat the butter with a mixer.

Continuing beating the butter add the sugar.

Then add the sour cream and beat further.

You should obtain such a mix.

Finally, add the flour.

Mix it first with the mixer.

Then with the hands until you obtain a dough of a consistency like in the picture. You can add more flour if needed.

Divide the dough into 15 small balls.

Wrap the balls into cling film and leave them in the fridge for 2-3 hours.

Meanwhile prepare the cherries.

After 2-3 hours roll each ball as it is shown in the photo.

Do the same with other balls.

Bake the rolls at 200 C for 15-20 minutes.

When all the rolls are baked and cooled, prepare the cream. Beat the sour cream and sugar with a mixer at high speed for approximately 10 minutes.

Then start building the “cottage roof”. The first row will consist of 5 rolls, the second of 4 rolls, the third – 3, the fourth – 2, and the last one of 1 roll. Smear generously with cream each row and in the end the entire “roof”.

You can decorate the cake in different ways! Put the cake in the fridge for at least 12 hours, enjoy!
